DOUGH The shortcrust pastry of i Fortini is prepared in a slow and delicate way, using only centrifuge butter, flour, sugar and egg yolk ROLLING The Cookies are produced as they once were, rolled by hand, without the help of machinery or molds CUTTING AND COOKING After rolling, the Fortini are cooled for 24 hours, cut and then baked in the oven PACKAGING After cooking the Fortini are cooled to room temperature and finally packaged one by one in single portions
